Was watching Nacho Libre last night (Love Jack Black!) and there was a scene where he's riding into town on that weird cart/moped and he passes what looked like a 2 Door Hornet or Concord... am I right?

Looks more like a 2 door concord. Doesn't have the same back as a hornet

Bumper suggests Hornet. Grille kind of does but too blurry to really tell.

Well it might be good to note that this movie was supposed to be located in Mexico...whether it was actually filmed there I'm not sure, but that could mean this is some sort of Mexican AMC that is slightly different.

If shot in Mexico then it could very well be a VAM American (their name for the Hornet/Concord). Mirror also suggests older. US Concords had those big old energy absorbing bumpers the first year and then bumper ends after that.
